PROBLEM TO BE SOLVED: To provide a polyunsaturated fatty acid (PUFA)-containing oil with increased oxidative stability which does not oxidize to become rancid during storage resulting in unpleasant flavors and odors in the oil.SOLUTION: A PUFA-containing oil with increased oxidative stability comprises (i) at least 30 wt.% of one or more polyunsaturated fatty acids having at least 4 double bonds, (ii) at least one first antioxidant, and (iii) less than approximately 1000 ppm of lecithin.
