PROCÉDÉ DESTINÉ À LA PRODUCTION D'UNE MATIÈRE DE REMPLISSAGE COMPOSÉE DE DRÊCHE, MATIÈRE DE REMPLISSAGE, UTILISATION D'UNE MATIÈRE DE REMPLISSAGE ET PRODUIT ALIMENTAIRE
Offenbart ist ein Verfahren zur Herstellung eines Füllstoffs aus Schlempe, insbesondere zur Ergänzung eines Zuckerersatzstoffes in einem Lebensmittel. Die verwendete Schlempe wurde als Abprodukt bei der Herstellung von Bioethanol auf Basis von stärkehaltigen Getreiden erhalten. Das Verfahren enthält die folgenden Schritte: a) Zerkleinern der Schlempe, b) Erhitzen der Schlempe, c) optional: Fermentieren der Schlempe, d) optional: Reduzieren der Feuchtigkeit der Schlempe, e) optional: Mischen der insbesondere getrockneten Schlempe mit mindestens einem geschmacksmodifizierenden Lebensmittelzusatzstoff, insbesondere mindestens einem Zuckerersatzstoff und/oder mindestens einem Aroma. Das Zerkleinern der Schlempe im Schritt a) kann ein Vermahlen, insbesondere ein Nassvermahlen enthalten. Das Reduzieren der Feuchtigkeit im Schritt d) kann in einem ersten Teilschritt d1) mechanisch und in einem zweiten Teilschritt d2) thermisch erfolgen. Weiterhin offenbart sind ein durch dieses Verfahren erhaltener oder erhältlicher Füllstoff, eine Verwendung eines solchen Füllstoffs und ein Lebensmittel mit mindestens einem solchen Füllstoff.Disclosed is a process for producing a filler from whole stillage, in particular for supplementing a sugar substitute in a foodstuff.
