To industrially produce a crystallized product of difructose anhydride III (di-D-fructofuranose-1,2 2,3 dianhydride and hereafter DFA III) which is very useful as a functional oligosaccharide.
SOLUTION: A DFA III-containing syrup obtained by enzymatic treatment of inulin is treated with active-carbon and filtrated and concentrated. The resulting product is crystallized with or without addition of seeds. The crystallized product is purified with a particle size selector and a sifter to produce a crystal powder having a certain particle size distribution. These crystals and crystal powder are all new substances. Although typical crystals cannot be formed into tablets, crystals containing new crystals or crystal powder having a certain particle size distribution and or crystal powder can be formed into tablets.
