PROBLEM TO BE SOLVED: To make improvement in adding flavor (aroma) in a quantitative feeder for broth which uses concentrated broth, by solving the problem that it has been still very difficult to obtain from diluted concentrated-broth the aroma (flavor) of broth that is close to the genuine aroma (flavor) of broth that has just prepared.SOLUTION: The apparatus includes pump means for supplying a predetermined quantity of concentrated broth from a concentrated broth container, means for supplying a predetermined quantity of hot water from a hot water tank, means having a broth mixing portion to mix the concentrated broth and hot water, and for holding a broth pack for adding flavor to hot water in a passage through which hot water is supplied in the broth mixing portion, a passage through which hot water supplied from the hot water tank flows downward, with flavor added thereto as a result of permeating through the broth pack, and a passage from which concentrated broth is supplied below the broth pack, so that the concentrated broth and flavored hot water are mixed below the broth mixing portion, and the mixture is supplied.COPYRIGHT: (C)2012,JPO&INPIT【課題】濃縮だしを希釈した場合の香りについては、取りたてのだしから香る香り(風味)にはまだまだほど遠いのが現状でり、濃縮だしを使用するだし汁の定量供給装置において、風味(香り)を付与することができるようにする改善する。【解決手段】濃縮だし容器から所定量の濃縮だしを供給するポンプ手段と、湯タンクから所定量の湯を供給する手段と、濃縮だしと湯を混合するだし混合部とを有し、だし混合部において、湯が供給される経路において湯に風味を付加するだしパックを保持する手段と、湯タンクから供給される湯が、だしパックに浸透して風味が付加された状態で湯が下方へ流れる経路と、だしパックの下方において濃縮だしが供給される経路とを有して、だし混合部の下方において濃縮だしと風味を付加された湯とを混合して供給することを特徴とするだし汁の定量供給装置を提供する。【選択図】 図3
