PROBLEM TO BE SOLVED: To provide thin film evaporation treatment oil and fat reduced in the content of saturated fatty acid in total fatty acid that composes oil and fat in stock oil and fat.SOLUTION: This method for producing thin film evaporation treatment oil and fat includes a process for obtaining residue by carrying out thin film evaporation treatment of stock oil and fat containing more than 15 mass% and at most 25 mass% of 16-24C saturated fatty acid in total fatty acid that composes stock oil and fat, at least 5 mass% of palmitic acid in total fatty acid that composes stock oil and fat, and at least 85 mass% of triglyceride in stock oil and fat.
