The vacuum cooling system (20) comprises a vacuum cooling device (13) which comprises at least one vacuum chamber (14a-e) for receiving the baked goods, said chamber being loadable and unloadable from the outside via panels or doors which close in a vacuum-tight manner. The at least one vacuum chamber (14a-e) is connected to a pump arrangement (23, 24), which comprises at least one vacuum pump (23a,b 24a,b), via a vacuum line (21, 21a,b) which can be separated by a first valve (V1-V5). An efficient and flexible operation is achieved in that a vacuum container (22 22a,b) is integrated into the vacuum line (21, 21a,b) between the first valve (V1-V5) and the pump arrangement (23, 24) for buffering purposes.
