The present invention provides a processed product in the shape of sea cucumber comprising a sea cucumber extract. According to the present invention, the sea cucumber extract with a large amount of bioactive substances can be obtained at a high yield in a simple and inexpensive manner and is shaped into a processed product of a sea cucumber shape. Therefore, sea cucumber culturist&prime；s income can be increased and people&prime；s health can be promoted. Furthermore, the processed product in the shape of sea cucumber is expected to contribute to national economy growth through export of the shaped product of the sea cucumber extract with excellent visual characteristics. The processed product in the shape of sea cucumber is obtained by the following steps: 1) enzyme-extracting sea cucumber powder； 2) filtrating the enzyme extraction product obtained in the step 1)； and freezing and drying the filtrate obtained in the step 2).본 발명은 해삼추출물로 이루어진 해삼형상의 가공품을 제공하며, 상기 구성에 의하면 생리활성물질이 풍부한 해삼의 추출물을 고수율로 간단하고 저렴한 방법을 통해 얻어 이를 해삼형성의 가공품으로 성형함으로써 해삼양식업자의 소득증진은 물론이거니와 국민건강의 증진에도 기여하고, 나아가 시각적 특성이 우수한 해삼추출물의 성형품의 수출을 통해 국가경제의 성장에도 크게 기여할 것으로 기대한다.
