The present invention relates to a method for growing a pine mushroom analog of good quality, which has a shape, colors, taste, and texture very similar to natural pine mushrooms at harvest time, using shiitake spawns. The method comprises the following processes: preparing a medium vibrator in which a medium for shiitake (A) is piled up, and vibrating the medium for shiitake to give the shiitake spawns a mechanical shock； culturing shiitake mycelia in the medium (A), into which the shiitake spawns have been inoculated, until the mycelia becomes third mycelia and turns brown； transferring the medium (A) to the medium vibrator at the stage of browning of the medium (A)； and vibrating the browned third mycelia once or several times periodically or intermittently for a period of time to give a mechanical shock to the browned third mycelia, and thereby more third mycelia gather and agglomerate in a point where the mushroom develops by the mechanical shock applied by the medium vibrator than when no mechanical shock is applied, and therefore a mycelial mass and fruit body primordia are formed with greater volume and density so as to induce morphological variation of the mycelial mass and the fruit body primordia developed therefrom.본 발명은 표고 종균을 이용하면서 수확된 버섯의 형상, 색깔, 맛 및 식감 등이 자연 송이와 매우 유사한 양품의 상화 송이 버섯의 재배 방법에 관한 것으로, 표고 버섯 배지(A)를 적치하고 진동시켜 표고버섯 균사체에 역학적 충격을 줄 수 있는 배지진동장치를 마련하고, 표고 버섯 종균을 접종한 배지(A)에서 표고 균사체를 3차균사체 에 의한 갈변 단계까지 배양한 후, 배지(A)의 갈변 단계에서 배지(A)를 상기 배지진동장치에 옮기고, 1회 또는 일정기간 동안 주기적 또는 간헐적으로 수회에 걸쳐, 일정시간 진동시키면서 갈변된 3차균사체에 역학적 충격을 줌으로써, 배지진동장치에 의해 3차균사체에 가해진 역학적 충격에 의해 역학적 충격이 없을 때보다 더 많은 양의 3차균사체가 버섯이 발생할 지점에 집합 및 응집되어 부피와 밀도가 큰 균사괴 및 자실체 원기를 형성하게 함으로써, 균사괴 및 이로부터 발생하는 자실체 원기의 형질 변이를 유도하는 것을 특징으로 한다.
