The present invention relates to a farming method and, more specifically, to a method for farming catadromous fish (Anguilla marmorata) through a recirculating system and phased seawater acclimation which can give excellent texture, flavor, color, etc. by using specific ecological and biological properties of catadromous fish. According to one aspect of the present invention, provided is the method for farming catadromous fish including: a fingerling transferring step (100), a fingerling farming step (200), and an acclimation step (300), and the method is characterized by comprising an acclimation farming step where water waves are generated by using a venture-attached water motor in an acclimation water tank to allow catadromous fish to move to the opposite side of the water waves, and catadromous fish is acclimated for 30-40 days without feeding. According to the present invention, in phased seawater acclimation, catadromous fish including Anguilla marmorata, which fits for customer&primes preference since flavor and color are the same with natural one, can be prepared by acclimation holding the catadromous fish without feeding.
