To provide a method for manufacturing iodine-added salt capable of maintaining an efficient iodine content over long time for overcoming a fact that iodine is easy to be vaporized (sublimated) with time during distribution or storage process and an actually ingestible iodine amount is reduced in the iodine-added salt in a generally known conventional method such as a method for spraying an iodination agent which is an inorganic salt solution containing iodine such as potassium iodide to an edible salt, a method for mixing the edible salt and the iodination agent in a dried state as a manufacturing method of the edible salt to which iodine is added.SOLUTION: There is provided a manufacturing method of an edible salt by an ion exchange membrane method or a dissolution reformation method, including a process for adding iodine or iodine and bromine to a base solution, and a process for crystallizing the base solution, in this order, in which the edible salt is manufactured by containing iodine into a sodium chloride crystal, including substitution of a part of atoms constituting a crystal lattice of sodium chloride which is the edible salt with an iodine atom, or the like.SELECTED DRAWING: None【課題】ヨウ素が添加された食用塩の製造方法として、従来、食用塩に対してヨウ素カリウム等のヨウ素を含む無機塩水溶液であるヨウ素化剤をスプレーする方法や、乾燥した状態で食用塩とヨウ素化剤とを混合する手法等が一般的に知られている。しかしヨウ素添加塩は、流通や保管過程においてヨウ素が経時的に揮発(昇華)しやすく、実際に摂取可能なヨウ素量が低下してしまう。そこで長期にわたり十分量のヨウ素含有量が維持可能であるヨウ素添加塩を製造する方法を提供する。【解決手段】イオン交換膜法又は溶解再製法による食用塩の製造方法であって、母液にヨウ素又はヨウ素及び臭素を添加する工程、及び前記母液を晶析する工程、をこの順に含み、食用塩である塩化ナトリウムの結晶格子を構成する原子の一部をヨウ素原子に置換する等、塩化ナトリウム結晶内にヨウ素を含有させることによる食用塩を製造する。【選択図】なし
