Use of particulate material in production of a beverage is claimed. The material particles are added in the course of the production to a starting material or an intermediate product of the beverage and separated off again prior to finishing of the beverage. The particles of the material at least partially comprise a silicate, where the silicate particles have 1.5-30 wt.% at least one metal ion comprising lanthanum, cerium, copper, silver, zinc, tin, calcium, magnesium, iron or manganese. An independent claim is also included for a beer brewing comprising adding silicate particles to the mash.
