PROBLEM TO BE SOLVED: To provide an oil-in-water edible emulsified composition synergistically increasing emulsifiability to a fat soluble substance, enabling fine and stable emulsification even without using an emulsion machine having a strong shearing force, such as a high pressure homogenizer, stable in emulsion stability after subjected to heat sterilization, and excellent in acid-resisting and salt-resisting properties and a taste quality.
SOLUTION: This oil-in-water edible emulsified composition is an oil-in-water edible emulsifier which contains (a) polyoxyethylene sorbitan fatty acid ester specified in a saponification value and an oxyethylene base content, (b) polyglycerol mono-fatty acid ester specified in a content of glycerine fatty acid mono-ester, (c) alcohol selected from ethanol and propylene glycol, (d) a fat soluble substance, and (e) water. A weight ratio of component (a)/component (b) is 1/4 to 5/1, a weight ratio of the sum of the components (a) and (b) to the component (c), [(a+b)/c] is 1/3 to 5/1, and a weight ratio of the sum of the components (a) and (b) to the component (d), [(a+b)/d] is 1/2 to 20/1.
