An egg quality evaluation device (1) for implementing such an egg quality evaluation method is provided with a yolk diameter gauging unit (2) for measuring the diameter (D) of a yolk, a yolk height gauging unit (3) for measuring the height (H) of the yolk, and a physical value calculation unit (4) for calculating a physical value relating to the elasticity of the yolk membrane on the basis of the diameter (D) of the yolk and the height (H) of the yolk.
