The present invention relates to a process for modifying a triglyceride composition wherein a triglyceride composition which contains less than 15 wt. %, preferably less than 10 wt. %, most preferably less than 5 wt. % of lauric acid, and at least 15 wt. % of SUS, is subjected to a partial interesterification step in the presence of an interesterification catalyst, until a triglyceride composition is obtained with a degree of interesterification of between 10 and 90 % and an SFC-profile which is such that- the SFC of the modified triglyceride composition at 20°C is more than 25%, preferably more than 35%, more preferably more than 45%, most preferably more than 50%,- the SFC of the modified triglyceride composition at 35°C is less than 27%, preferably less than 20%, more preferably less than 15%, and- the difference between SFC at 20°C and the SFC at 35°C is at least 25% preferably at least 30%,whereby the SFC is the SFC measured according to method IUPAC 2.150 a.
