PROBLEM TO BE SOLVED: To provide: a method for cooking a brown rice in which an anti-cancer ingredient is imparted; and a packed cooked brown rice of an amount depending on the usage.SOLUTION: Provided are: a method for cooking cooked brown rice comprising a step of water-washing a brown rice 1 and draining the water, followed by dry-roasting with a heating cooking-utensil 5, adding a water 7 while heating, and, in a state in which steam is evolving, adding a white rice or glutinous rice 8 of an amount of 10 to 20% of the brown rice and cover with a lid and heating for 6 to 10 minutes, and a step of transferring the contents to another cooking cooking-utensil and adding an appropriate amount of seasoning vinegar and salt, replenishing water by 10% to 15% more than the usual cooking, and soaking for 3 hours to 5 hours, followed by cooking; and a packed cooked brown rice in which, when said just-cooked cooked brown rice is vacuum-packed in a hot state, three types of amount depending on the usage are packed.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2019,JPO&INPIT【課題】抗ガン成分の効果を施した玄米ご飯の調理方法、及び、用途に応じた量のパック詰めした玄米ご飯の提供。【解決手段】玄米1を水洗水切り後加熱用調理器具5にて乾煎りし、加熱したまま水7を加え水蒸気をたたせた状態で、玄米の1割~2割の白米又はもち米8を加え蓋をして、6分~10分加熱する工程と、別の炊飯用調理器具に前記中身を移しかえて、調味料の酢と塩を適量加えて、水を通常炊きより1割~1.5割多く入れ足し、3時間~5時間浸け置き後炊飯する工程から成る、玄米ご飯の調理方法。前記の炊き上がった玄米ご飯を、熱い状態で真空パックする際、用途に応じた3種類の量を充填する、パック詰めする玄米ご飯。【選択図】図1
