A composition in a water-in-oil-in-water (W/O/W) emulsion is disclosed. The composition comprises: (a) a continuous aqueous phase, comprising H2O; (b) an oil phase or an oil shell, dispersed in the continuous aqueous phase; and (c) a hydrophilic polymer, stabilizing an interface between the continuous aqueous phase and the oil phase or the oil shell to form an oil-in-water (O/W) emulsion. The oil phase or the oil shell comprises: (i) oil; (ii) an internal aqueous phase, dispersed within the oil or the oil shell; and (iii) a lipophilic sorbitan-polyester conjugate, stabilizing an interface between the oil and the inner aqueous phase to form a water-in-oil (W/O) emulsion. The lipophilic sorbitan-polyester conjugate comprises: (1) sorbitan; and (2) poly(lactide-co- ε -caprolactone) or polylactic acid (polylactide), conjugated to the sorbitan.本發明揭示一種在水包油包水(W/O/W)乳液中之組合物,其組成成分包括:(a)含H2O成分之連續水相;(b)分散在連續水相間之油相或油殼;以及(c)用於穩定連續水相和油相(或油殼)界面之親水性聚合物,使其形成水包油(O/W)乳液。油相或油殼包括:(i)油、(ii)分散在油或油殼內之內部水相,以及(iii)一親脂性山梨醇酐-聚酯複合體,可穩定油和內部水相之間的界面,以形成油包水(W/O)乳液。該親脂性山梨醇酐-聚酯複合體包含:(1)山梨醇酐,以及(2)複合到山梨醇酐上之丙交酯-己內酯共聚物或聚乳酸。
