A process of producing bamboo (Bambuseae) shoot leaves tea powder, comprises of the following steps: collecting of bamboo shoot young leaves; washing the bamboo shoot leaves with fresh water; air-drying of bamboo shoot leaves for a period of time (at least 5 days); roasting the air-dried bamboo shoot leaves using frying pan at 50 to 55øC for 20-25 minutes, to minimize the moisture content; pulverizing the roasted bamboo shoot leaves using mortar and vessel; sieving of pulverized bamboo shoot leaves using sieving tool; cooling down the roasted powder bamboo shoots leaves; packing the powdered bamboo shoot leaves in an air-tight container. The process, according to claim 1, wherein the collecting and air-drying of bamboo shoot leaves in step (a) and (c) comprising the steps of: selecting the young leaf of bamboo shoot and air-drying the bamboo shoot leaves at the room temperature for at least 5 days.
