PROBLEM TO BE SOLVED: To provide a method for producing an odoriferous meat extract having a nut-like maturation odor high in production efficiency as possible by producing a meat extract of high quality including a nut-like flavor at a high concentration.SOLUTION: Meat molded bodies made of a granular or sheet-shaped body of meat and having a grain size or thickness of 0.3-10 cm are largely provided, their surfaces are subjected to heat sterilization, are further dried, are inoculated with the mold of Helicostylium or the mold of Thamnidium or a prescribe mold belong thereto in combination and are the fermented at a prescribed temperature of 5 to 20°C for a prescribed period, and subsequently, meat extract raw material containing 2-acetyl-1-pyrroline is extracted with water or a hydrophilic solvent. The surfaces of the meat molded bodies with prescribed dimensions are dried and are also subjected to heat sterilization to prevent the progression of the other molds and the other saprophyte, further, since the fluidity of the air is satisfactory at a space present at the inside of the assembled meat molded body, the prescribed mold actively progresses in a short time, and the odoriferous meat extract can be efficiently be produced.SELECTED DRAWING: NoneCOPYRIGHT: (C)2018,JPO&INPIT【課題】ナッツ様の香気が高濃度で含まれる品質の高い畜肉エキスを効率よく製造し、可及的に生産効率の高いナッツ様熟成香を有する香気性畜肉エキスの製造方法とすることである。【解決手段】畜肉の粒状またはシート状成形体からなり、その粒径または厚みが0.3~10cmの畜肉成形体を多数設け、それらの表面を加熱殺菌すると共に乾燥させた後、ハリエダケカビ属(Helicostylium)のカビもしくはエダケカビ属(Thamnidium)のカビまたはこれら両属の所定のカビを併用して接種し、次いで5~20℃という所定温度で所定期間発酵させた後、2-アセチル-1-ピロリンを含有する畜肉エキス原料を水または親水性溶媒で抽出する。所定の大きさの畜肉成形体の表面を乾燥させかつ加熱殺菌して、他のカビ類その他の雑菌の繁殖を防ぐと共に、集合した畜肉成形体の内部まで存在する隙間で空気の流通性がよいので、前記所定のカビが短時間で活発に増殖し、効率よく香気性畜肉エキスを製造できる。【選択図】なし
