A method of peeling tubers, the method comprising the steps of: a. providing a peeler device defining a cavity surrounded by a peeling mechanism； b. inputting tubers to be peeled into the cavity； c. directing electromagnetic radiation from an illumination device into the cavity； d. detecting electromagnetic radiation reflected into lens of a camera from tubers located in the cavity during a peeling operation by the peeling mechanism； and e. operating the peeler device based on the reflected electromagnetic radiation detected by the camera. Also disclosed is an apparatus for carrying out the method.L'invention concerne un procédé d'épluchage de tubercules, le procédé comprenant les étapes consistant : a. à fournir un dispositif d'épluchage délimitant une cavité entourée par un mécanisme d'épluchage ； b. à introduire des tubercules à éplucher dans la cavité ； c. à diriger un rayonnement électromagnétique provenant d'un dispositif d'éclairage dans la cavité ； d. à détecter un rayonnement électromagnétique réfléchi dans la lentille d'une caméra et en provenance de tubercules situés dans la cavité pendant une opération d'épluchage réalisée par le mécanisme d'épluchage ； et e. à faire fonctionner le dispositif d'épluchage sur la base du rayonnement électromagnétique réfléchi détecté par la caméra. L'invention concerne également un appareil destiné à réaliser le procédé.
