The present invention is related to a process of isolation of whey protein powder and lactose from whey using a non-alcoholic and biogenic or green solvents like ϓ-valerolactone. Whey protein and lactose with improved flavour is obtained. The process comprises conversion of whey to a concentrate that is subjected to protein precipitation aided recovery using a non-alcoholic water-miscible biogenic GRAS (generally regarded as safe) solvent like gamma valerolactone. After recovery of precipitated proteins crystallization of lactose is facilitated even at ambient temperature within the supernatant water-gamma valerolactone mixture because of its composition of low polarity. The crystallization is accelerated at low temperature. Lactose recovered is pure (94.4%), while protein is low lactose. Whey protein can be used as such or can be processed further for fully lactose free preparation
