PROBLEM TO BE SOLVED: To provide fermentation temperature control by electrifying treatment, and to provide a promotion method for food microorganism propagation/metabolism.SOLUTION: There is provided a method for controlling the fermentation temperature and/or fermentation microorganism propagation/metabolism in a fermentation process using a food microorganism, which method comprises promoting microorganism propagation/metabolism by controlling, by electrification heating, the fermentation temperature to be in a predetermined temperature range and/or by conducting electrifying treatment applying AC voltage to a culture solution of the food microorganisms. There is also provided a new fermentation technology using electrification heating or electrifying treatment and useful for precise control of the fermentation temperature in a fermentation process and promotion of propagation/metabolism of food microorganisms such as SAKE yeast and salt tolerant yeast.
