The present invention relates to a method of operating a continuous vegetable dehydrator. The continuous vegetable dehydrator includes: a dehydrating part including a dehydrating tub for dehydrating inserted vegetables； and an insertion part including a first conveyor to insert the vegetables into the dehydrating tub. More specifically, the method includes: a first step of supplying washed vegetables to the first conveyor； a second step of making the first conveyor move along a guide rail to have the front end inserted into the dehydrating tub； and a third step of making the first conveyor move backwards along the guide rail while inserting the washed vegetables into the tub. Accordingly, since the vegetables are continuously inserted from the lower part of a rotary container to the upper part of the container through the conveyor, the present invention is capable of reducing the time required for dehydration and preventing damage caused by the weight of the vegetables, and easily discharging the dehydrated vegetables by including a nozzle installed at the front end to spray air or water.본 발명은 투입되는 야채를 탈수하는 탈수통이 포함된 탈수부와, 상기 탈수통에 야채를 투입하도록 제1컨베이어가 포함된 투입부로 이루어진 야채용 탈수기의 구동방법에 관한 것으로, 더욱 상세하게는 상기 제1컨베이어로 세척된 야채를 공급하는 1단계； 상기 제1컨베이어가 가이드레일을 따라 이동하여 선단이 탈수통의 내부로 삽입되는 2단계； 상기 탈수통의 내부로 제1컨베이어가 세척된 야채를 탈수통의 내부로 투입하면서 가이드레일을 따라 후진하는 3단계；를 포함하는 것이 특징인 야채용 연속식 탈수기의 구동방법에 관한 것이다.상술한 바와 같이 상단이 기울어져 있는 회전통의 상부를 통해 회전통의 내부 측 하부부터 상부 측으로 컨베이어를 통해 연속식으로 야채를 투입함으로써 야채의 자체 하중에 의한 손상이 방지 및 탈수시간이 단축되며, 또한 컨베이어의 선단에 공기 또는 물을 분사할 수 있는 노즐이 장착되어 탈수 후, 탈수된 야채의 배출이 용이하다는 등의 현저한 효과가 있다.
