PROBLEM TO BE SOLVED: To obtain an improving agent for fowl egg properties capable of obtaining a fowl egg not requiring an aging, etc., showing a high foaming property even just after the egg-laying, having a high holding power of produced bubbles, less in reduction of the bubbles, also having a heavy weight of its yolk part, maintaining its rise for a long period of time and less in reduction of the weight of the egg.SOLUTION: This improving agent for fowl egg properties is obtained by using a surfactant, preferably at least one selected from a group consisting of a glycerol mono-fatty acid ester, glycerol di-fatty acid ester, poly-glycerol fatty acid ester, sorbitan fatty acid ester, sucrose fatty acid ester, propylene glycol fatty acid ester, lecithin and soybean phospholipid.COPYRIGHT: (C)2001,JPO【課題】 エージング等の必要がなく、産卵直後でも卵白の起泡性が高く、生成した気泡の保持力が高く、泡戻りが少なく、且つ卵黄部分の重量が重く、その盛り上がりが長期間保持され、卵重量の減少の少ない家禽卵を得ることができる家禽卵性質改善剤を提供すること。【解決手段】 家禽卵性質改善剤として界面活性剤、好ましくは、グリセリンモノ脂肪酸エステル、グリセリンジ脂肪酸エステル、ポリグリセリン脂肪酸エステル、ソルビタン脂肪酸エステル、ショ糖脂肪酸エステル、プロピレングリコール脂肪酸エステル、レシチン及び大豆リン脂質からなる群から選択される1種又は2種以上の界面活性剤を用いる。
