PROBLEM TO BE SOLVED: To remove sufficiently composite odor contained in a protein or a peptide inclusion which is difficult to be removed by an adsorption removal method of odor using active carbon or an ion exchange resin.SOLUTION: A protein or a peptide inclusion is deodorized by, for example, subjecting aqueous solution containing frozen or dried protein or peptide inclusion derived from an animal or seafood to electrodialysis treatment.
