PROBLEM TO BE SOLVED: To provide a cellulose-based stabilizer satisfying the following conditions: having high functions as a stabilizer for milk beverage not affecting taste and not spoiling texture suppressing occurrence of oil-off, oil-ring or the like when preserved for a long time and having efficacy at a low addition level, and to provide beverage including the stabilizer.
SOLUTION: This crystalline cellulose composite includes 50-95 mass% of crystalline cellulose and 5-50 mass% total of propylene glycol ester alginate and sodium carboxymethyl cellulose. When the crystalline cellulose composite is made into an aqueous dispersion with 1 mass% solid content, the storage modulus of elasticity is 0.1 Pa or more.
