PROBLEM TO BE SOLVED: To provide a heat-irreversible gel product using konjak mannan, capable of reducing or deodorizing konjak smell, and free from harshness and astringency and to provide a production method for producing easily the heat-irreversible gel product.SOLUTION: A heat-irreversible gel product is produced as follows: alkali is mixed with konjak mannan sol, and one or two or more of organic acid, organic salt, food material and fruit juice are mixed to lower pH between start and completion of deacetylation, and after stopping deacetylation, heating or heating after refrigeration is carried out.
