Disclosed is a method for preparing a functional ginseng Kimchi, which can maintain a basic taste of Kimchi even though zinc, selenium, and ginseng are added to ingest zinc, selenium, and ginseng through a daily dietary life. To this end, the method of the present invention comprises: a Chinese cabbage salting step of salting a Chinese cabbage； a cabbage washing step of washing the salted Chinese cabbage, and dehydrating the same； a ginseng preparing step of extracting juice from ginseng to separate the same into a ginseng extract and ginseng residues； a seasoning preparing step of adding organic selenium and zinc powder extracted from the ginseng extract, the ginseng residues and a plant to produce a seasoning sauce； and a Chinese cabbage seasoning step of mixing the washed Chinese cabbage with the seasoning sauce. According to the present invention, side effects caused by the excessive intake of selenium can be prevented by using organic selenium instead of inorganic selenium which may cause side effects due to the excessive intake even through the daily consumption of Kimchi may be flexibly changed depending on an eating habit.일상의 식생활을 통해서 아연과 셀레늄 및 인삼을 섭취할 수 있도록 아연과 셀레늄 및 인삼을 첨가하더라도 김치의 기본적인 맛을 유지할 수 있는 기능성 인삼김치의 제조방법이 개시된다. 이를 위하여 배추를 염장처리하는 배추절임단계와, 염장처리된 배추를 세척한 후 탈수시키는 배추세척단계와, 인삼을 착즙하여 인삼 추출액과 인삼 건더기로 분리하는 인삼손질단계와, 상기 인삼 추출액과 인삼 건더기와 식물에서 추출된 유기 셀레늄 및 아연 분말을 첨가하여 양념소스를 생성하는 양념준비단계, 및 세척된 배추를 상기 양념소스로 버무려 주는 배추양념단계를 포함하는 기능성 인삼김치의 제조방법을 제공한다. 본 발명에 의하면, 식습관에 따라 김치의 1일 섭취량이 유동적으로 변경될 수 있으나 과량 복용에 의해 부작용이 유발될 수 있는 무기 셀레늄 대신 유기 셀레늄을 사용하므로, 셀레늄 과량 섭취에 의한 부작용을 예방할 수 있다.
