Disclosed is a process to produce a lactase by a method comprising: (a) cultivating an arylsulfatase deficient host cell in a nutrient medium, under conditions conductive to expression of the lactase, wherein said arylsulfatase deficient host cell is a recombinant arylsulfatase deficient strain obtained by disturbing a gene coding for arylsulfatase activity, by inserting a marker gene into a gene coding for arylsulfatase activity, or by removal of part or all of the arylsulfatase coding region from the genome, (b) expressing the lactase in said host cell, and (c) recovering the lactase from the nutrient medium or from the host cell.
