The present invention relates to a method of manufacturing evening primrose seed oil. The method includes: a cleaning and soaking step (S1) of cleaning evening primrose seeds and soaking the seeds in water； a peeling and cleaning step (S2) of peeling the evening primrose seeds and cleaning the peeled evening primrose seeds； a drying step (S3) of drying the peeled evening primrose seeds； an oil expression preparation step (S4) of covering the evening primrose seeds with natural cotton cloth and again with hanji (traditional Korean paper handmade from mulberry trees)； and an oil expression step (S5) of expressing oil from the evening primrose seeds covered with the natural cotton cloth and hanji. The evening primrose seed oil given in the present invention has a benzopyrene content much lower than a standard value, is excellent in reducing oxidation and acidification, and accordingly can be stored for a long time. Also, the present invention is able to manufacture the evening primrose seed oil containing fatty acid with excellent effects such as gamma linolenic acid through a very simple process.본 발명은 달맞이 꽃 종자유 제조방법에 관한 것으로, 달맞이 꽃 종자를 세척하고 불리는 세척 및 불림단계(S1)； 상기 달맞이 꽃 종자를 박피한 후 박피 된 달맞이 꽃 종자를 세척하는 박피 및 세척단계(S2)； 상기 박피 된 달맞이 꽃 종자를 건조하는 건조단계(S3)； 상기 달맞이 꽃 종자를 천연 광목천으로 감싼 후, 한지를 이용하여 다시 한 번 감싸는 착유준비단계(S4)； 상기 천연 광목천 및 한지를 통해 감싸진 달맞이 꽃 종자를 착유하는 착유단계(S5)；를 포함한다.이러한 본 발명은 벤조피렌이 기준치 보다 현저히 낮게 검출되며, 산화 및 산패 저감 효과가 우수하여, 장기간 보관이 가능한 효과가 있다. 또한 본 발명은 매우 간단한 공정을 통해 감마-리놀렌산과 같은 우수한 효능을 갖는 지방산을 많이 포함하는 달맞이 꽃 종자유를 제조할 수 있는 효과가 있다.
