PROBLEM TO BE SOLVED: To provide a simple and efficient technique for improving the taste, solubility, absorbability and metabolism.
SOLUTION: A naringin composition comprising naringin and &alpha-glucosylprunin is provided. By using the composition, the taste, solubility, absorbability and metabolism of naringin can be improved significantly. This composition can be efficiently produced by making an enzyme having &alpha-1,2-rhamnosidase activity act on a naringin-containing material followed by making cyclodextrin glucanotransferase act in the presence of a succharide donor, wherein a citrus extract can be preferably used as the naringin-containing material.
