The present invention relates to a process and installation of the trituration of the seeds of oleaginous plants for the production of oil and oil cake, using the following succession of steps: - supplies of seeds of oleaginous plants comprising a stone surrounded by a shell, - peeling at least part of the seeds, - heating of the seeds are at least partially, - mechanical stirring of the seeds, at least partially, decorticated and heated, - pressing operation of the seeds to obtain a first oily phase and a coproduct of the type of oil cake, - operation of the expansion of said intermediate coproduct of the type of oil cake, - incorporation into said intermediate coproduct of the type of oil cake, of a solvent for lipid, and - pressing operation of said intermediate coproduct of the type of oil cake, in order to obtain a second oily phase with the solvent, and a coproduct of the type of oil cake.
