PURPOSE: A producing method of pig's trotter soup is provided to provide high contents of collagen component and polysaccharide protein in the pig's trotter soup to eaters. CONSTITUTION: Pig's trotter is dipped with water at a temperature lower than 20°;C, and washed in flowing water. The pig's trotter is mixed with salt and a medical herb extract, and salted for 10-12 hours. The salted pig's trotter is washed in flowing water, and boiled in water at a temperature greater than 100°;C for 10-15 minutes. The firstly steamed pig's trotter is washed, and mixed with water, mulberry leaves, ginger, garlic, onion, and spring onion before boiling for 8-10 hours. Fat, floating substances, and bones and flesh from the pig's trotter is removed from the obtained soup, and 0.5% of natural calcium is added to the soup before boiling for an hour. The obtained extract is sterilized at 100-125°;C for 30-40 minutes before sealing and packaging. The pig's trotter is formulated into retort food, jelly, Korean traditional cookies, or capsules.
