1. A method of stimulating gene expression of a phase II enzyme in a child subject, comprising administering to the subject a food composition containing an effective amount of a herbal supplement. The method of claim 1, wherein the method further stimulates the expression of a protein of the phase II enzyme. The method of claim 1, wherein the method provides enhanced protection against xenobiotics when a child becomes adult. The method of claim 1, wherein the phase II enzyme is selected from the group consisting of glutathione transferase, UDP-glucuronosyl transferase, NAD (P) H: quinine oxidoreductases 1, sulfotransferases, N and O-methyl transferases, and mixtures thereof. The method of claim 1, wherein the child subject is an infant aged from about 0 to 12 months. The method of claim 1, wherein the child subject is a child aged from about 1 year to 6 years. The method of claim 1, comprising administering the food composition to a child subject in utero, in infancy, and in childhood. The method of claim 1, wherein the herbal supplement is selected from the group consisting of polyphenol, carotenoid, isothiocyanate, or a mixture thereof. The method of claim 8, wherein the polyphenol is selected from the group consisting of flavonoids, flavonols, flavanols, flavanones, chalcones, flavonoids, isoflavonoids, anthocyanins, proanthocyanidins, cyanidins and mixtures thereof. 10. The method of claim 8, wherein the carotenoid is selected from the group consisting of lutein, zeaxanthin, astaxanthin, lycopene, beta-carotene, alpha-carotene, gamma-carotene, alpha-cryptoxanthin, beta-cryptoxanthin and mixtures thereof. 11. The method of claim 8, wherein the isothiocyanate is selected from the group consisting of sulforaphane, phenethylisothiocyanate, and mixtures thereof.
