PROBLEM TO BE SOLVED: To provide a polyphenol-containing protein which is reduced in bitterness and astringency and comprises a water-insoluble complex of a polyphenol and a protein, and a method for producing the polyphenol-containing protein.SOLUTION: The method for producing the polyphenol-containing protein comprising the water-insoluble complex of the polyphenol and the protein includes the steps of: respectively coating polyphenol-containing powder and protein-containing powder with lipids to form a lipid coat on the surfaces of the polyphenol-containing powder and the protein-containing powder; and mixing the polyphenol-containing powder and the protein-containing powder, on which the lipid coat is formed, in an aqueous solution at a desired shearing force to break the lipid coat, thereby forming the water-insoluble complex of the polyphenol and the protein. The polyphenol-containing protein comprises the water-insoluble complex produced by the method.
