The present invention provides a manufacturing method of striped jerky, which comprises the steps of: cutting the raw meat into minced meat blocks, which still preserve meat fibers adding seasonings to the minced meat blocks to form a mixture material by mixing and stirring pickling and ripening the seasoned mixture material so as to form a seasoned meat block and cutting the seasoned meat block into semi-finished jerky stripes, and baking the semi-finished meat stripes at high temperature to form a finished product of striped jerky.
