The present invention relates to a seasoning composition for grilled eels and a preparing method thereof, and more specifically, to a seasoning composition in which cinnamon powder is used to provide a novel flavor and taste and eliminate unpleasant fishy smell, and to a preparing method thereof. The present invention provides the seasoning composition for grilled eels, prepared by mixing compositions. The compositions comprise: 100 parts by weight of cinnamon powder, 150 to 200 parts by weight of pepper, 800 to 1,200 parts by weight of garlic, 800 to 1,200 parts by weight of ginger, 10,000 to 15,000 parts by weight of starch syrup, 9,000 to 13,000 parts by weight of red pepper paste, 400 to 700 parts by weight of sesame oil, and 500 to 800 parts by weight of water. Furthermore, the present invention provides seasoned grilled eels prepared by mixing 100 parts by weight of trimmed eels with 5 to 30 parts by weight of the seasoning composition for grilled eels. Provided is a method for grilling the seasoned eels, comprising a step (step 1) of preparing eels to be grilled a step (step 2) of grilling the prepared eels roughly on high heat a step (step 3) of mixing 5 to 30 parts by weight of the seasoning composition for eels with the 100 parts by weight of the eels roughly grilled in the previous step to prepare seasoned eels a step (step 4) of secondarily grilling the seasoned eels and a step (step 5) of thirdly grilling the seasoned eels grilled secondarily in the previous step.
