The following are provided according to the present invention: a method for producing a medium that can be applied to different types of bacterial species and strains for, in particular, lactic acid bacteria culture, such medium being capable of achieving high density of bacterial cells and endowing stability such as heat tolerance and active proliferative capacity within low-temperature and high-temperature ranges to bacterial cells; and a method for culturing bacterial cells using such medium. In a mixture that constitutes a liquid medium, carbonates and germ koji are mixed and sterilized while the other mixture is separately sterilized. The other mixture containing a germ koji extract, different nitrogen and carbon sources, animal or plant fat or oil containing oleic acid, polysorbate, and iron is mixed to complete the medium. Bacterial cells cultured in such medium have excellent heat tolerance and bacterial cell stability, and therefore, the cells can be formed into a dry powder at a good yield.
