This invention relates to a new starch branching enzyme, and to the gene encoding the enzyme. In particular, the invention provides a new starch branching enzyme type II from wheat, the nucleic acid encoding the enzyme, and constructs comprising the nucleic acid. The invention also relates to a novel method for identification of branching enzyme type II proteins, which is useful for screening wheat germplasm for null or altered alleles of wheat branching enzyme IIb. The novel gene, protein and methods of the invention are useful in production of plants which produce grain with novel properties for food and industrial applications, for example wheat grain containing high amylose or low amylopectin starch.La présente invention concerne une nouvelle enzyme ramifiante de lamidon, ainsi que le gène codant ladite enzyme. Linvention concerne, en particulier, une nouvelle enzyme de lamidon du type II tirée du blé, lacide nucléique codant ladite enzyme et les constructions comprenant ledit acide nucléique. Linvention concerne également une nouvelle méthode didentification des protéines enzymatiques ramifiantes du type II, que lon utilise pour le criblage, dans le matériel génétique du blé, dallèles nuls ou modifiés de lenzyme ramifiante IIb du blé. Ce nouveau gène, cette nouvelle protéine et ces nouvelles méthodes selon linvention permettent de produire des plantes produisant des grains possédant de nouvelles propriétés en termes dapplications alimentaires et industrielles, notamment des grains de blé contenant un amidon à teneur élevée en amylose ou à teneur en amylopectine réduite.
