Die vorliegende Erfindung betrifft eine Zubereitung zum Färben und/oder Aromatisieren von Nahrungsmitteln umfassend (i) eine Ölphase umfassend ein, zwei oder mehrere aktive Inhaltsstoffe ausgewählt aus der Gruppe bestehend aus Lebensmittelfarbstoffen, färbenden Lebensmitteln, Aromen und aromatisierenden Lebensmitteln, wobei die Ölphase in Form von Öltröpfchen vorliegt und die Öltröpfchen einen Durchmesser von 50 μm oder weniger aufweisen, (ii) ein oberflächenaktives System, umfassend die Trockensubstanz von einem, zwei oder mehreren Nahrungsmitteln ausgesucht aus der Gruppe bestehend aus Früchten und Gemüse und Teilen davon und (iii) gegebenenfalls Wasser. Insbesondere handelt es sich dabei um Öl-in-Wasser-Emulsionen und die sprühgetrockneten Produkte derselben.
