The present invention relates to a process comprising at least one reactive trituration step of contacting a fatty cake comprising from 3 to 30% of oil with an anhydrous light alcohol and an alkaline catalyst under conditions of temperature and duration sufficient to allow the extraction and transesterification of the vegetable oil and leading to obtaining a mixture comprising fatty acid esters and glycerol, and a deoiled cake containing less than 3% oil. The present invention also relates to a detoxified deoiled cake and a mixture of fatty acid ester with improved stability and oxidation resistance.La présente invention concerne un procédé comprenant au moins une étape de trituration réactive consistant à mettre en contact un tourteau gras comprenant de 3 à 30% d'huile avec un alcool léger anhydre et un catalyseur alcalin dans des conditions de température et de durée suffisantes pour permettre l'extraction et la transestérification de l'huile végétale et conduisant à l'obtention d'un mélange comprenant des esters d'acides gras et du glycérol, et un tourteau déshuilé comprenant moins de 3% d'huile. La présente invention concerne également un tourteau déshuilé détoxifié, ainsi qu'un mélange d'ester d'acides gras à stabilité et résistance à l'oxydation améliorées.
