PROBLEM TO BE SOLVED: To provide a soft cheese having both merits of the traditional production method and the stabilized production method, and a method of producing the same.SOLUTION: A soft cheese has an abundance ratio between sodium and chlorine (Na/Cl) of 0.92 or more in molar ratio, and has a pH of 6 or more and 7.5 or less.
