PROBLEM TO BE SOLVED: To provide an anti-oxidant extractable from green algae belonging to the genus Monostroma with water, suitable as a food, etc., and having an antioxidant property and a high stability, and a method for evaluating the quality of the green algae.
SOLUTION: This extract of the green algae belonging to the genus Monostroma is characterized by being obtained as its dissolved fraction by subjecting the green algae belonging to the genus Monostroma of Monostromaceae under an extraction process with a polar solvent, and containing a substance showing a maximum absorption wavelength at 270 nm in an acidic condition. The purified substance is characterized by having the following (a) to (d) physicochemical properties. (a) A compound having &le300 molecular weight. (b) Having 270 nm maximum absorption wavelength in an acidic condition. (c) Having a thermal stability at 100°C temperature. (d) Having a pH stability in an environment of pH 1-13. The beverages, foods, and medicinal and cosmetic compositions containing the above extract or purified substance are provided. The method for evaluating the quality of the green algae by measuring the color values of the green algae is also provided.
