PROBLEM TO BE SOLVED: To provide a method for producing a seaweed fermented composition richly containing an amino acid and also having favorable flavor.SOLUTION: The method for producing the seaweed fermented composition comprises drying seaweed followed by crushing the dried seaweed into powder, and thereafter treating seaweed raw material solution obtained by dissolving the powdered seaweed in water solution such as water with protease followed by fermenting the thus-treated seaweed raw material solution using lactobacillus. The seaweed fermented composition produced by the method is rich in an amino acid content, has favorable flavor and also high safety because of being derived from a natural substance, and is usable as a seasoning or functional food raw material.COPYRIGHT: (C)2011,JPO&INPIT【課題】アミノ酸含有量に富み、かつ、良好な風味を有する海藻発酵組成物を提供する。【解決手段】海藻類を乾燥後に破砕し、粉末状にした後、水等の水溶液に当該海藻類を溶解させた海藻原料液をプロテアーゼで処理した後、乳酸菌を用いて発酵させる。【効果】これにより得られる海藻発酵組成物は、アミノ酸含有量に富み、風味が良好であるとともに、天然物由来であるため安全性が高く、調味料、機能性食品素材として利用することができる。【選択図】なし
