FOOD AND DRINK-PRODUCING YEAST IN WHICH IDENTITY OF YEAST IS EASILY DISCRIMINATED, FOOD AND DRINK, AND METHOD FOR DISCRIMINATING IDENTITY OF YEAST USED FOR PRODUCING FOOD AND DRINK
PROBLEM TO BE SOLVED: To provide a technique for easily discriminating identity of yeast and improve quality and reliability of food and drink produced by using the yeast.SOLUTION: Yeast is brought to be food and drink-producing yeast imparted with identification information in determining identity of the yeast by mutating a gene unnecessary to be expressed in producing food and drink, thus obtaining yeast from the food and drink produced by using the yeast in producing the food and drink by using the food and drink-producing yeast, and determining if the base sequence pattern of a predetermined gene of the yeast coincides or not with the base sequence pattern of a predetermined gene of the food and drink-producing yeast in which the identity of the yeast is easily discriminated, and in the case of coincidence, the food and drink is determined to be the food and drink which has been produced by using the food and drink-producing yeast in which the identity of the yeast is easily discriminated.【課題】酵母の同一性を容易に判別せしめる手段を提供して、酵母を用いて製造する飲食品の品質及び信頼性を向上させる。【解決手段】飲食品の製造に用いる酵母の遺伝子の、飲食品製造において発現させる必要のない遺伝子を変異させて、酵母の同一性判定に際しての識別情報を付与した飲食品製造用酵母とし、この飲食品製造用酵母を用いて飲食品を製造することにより、酵母を用いて製造した飲食品から酵母を取得し、この酵母の所定の遺伝子の塩基配列パターンが、酵母の同一性判別が容易な飲食品製造用酵母の所定の遺伝子の塩基配列パターンと一致するか否かを判定して、一致した時は、前記酵母の同一性判別が容易な飲食品製造用酵母で製造した飲食品であると判別する。【選択図】なし
