PROBLEM TO BE SOLVED: To provide a manganese-containing substance which has an inhibited bitter and astringent taste and is produced from tea as a raw material.
SOLUTION: This method for producing the manganese-containing substance containing manganese in an amount of &ge10 ppm per percent of the solid content and having a potassium/manganese (K/Mn) weight ratio of &le20 comprises applying a water-washing treatment to tea leaves and then extracting the water-washed tea leaves with a solvent.
