The present invention provides an apparatus for preparing baked sweet potatoes, which comprises: a furnace, which sweet potatoes to be baked are transferred to and withdrawn from by a vehicle and a cart, wherein sweet potatoes can be heated at optimal temperatures according to the location of sweet potatoes inserted into the furnace； a fixed frame installed on the bottom surface at the front of the furnace, on which a rail is mounted to move a vehicle or a cart to the left and to the right； a moving vehicle arranged to move to the left and to the right on the rail of the fixed frame and having at least one pair of front and rear rails on the top surface； and a cart arranged to move back and forth on one pair of the front and rear rails and having multiple baking trays formed in a multi-step form on which sweet potatoes to be baked are placed.
