PROBLEM TO BE SOLVED: To provide a method for producing soft candy by which the soft candy can be produced without causing any mechanical trouble even when the moisture content value of the soft candy is increased, unique palate feeling like that of gummy candy which is hardly brought in conventional soft candy, is given to the soft candy by increasing the moisture content value, and further the soft candy having an optional shape considering that the soft candy is charged in a starch mold, is easily produced.
SOLUTION: The method for producing the soft candy includes: charging candy dough obtained by mixing sugar, oil and fat, and an emulsifier together, melting the mixture by heating, boiling up the mixture to have Brix 80-95 to make sugar liquid, mixing the sugar liquid with gelatin, and cooling the mixture to &le90°C followed by adding a crystallization-accelerating ingredient into the mixture to regulate Brix to 70-85, into a starch mold and simultaneously subjecting the candy dough to drying and aging so as to produce the soft candy having the gelatin content of 1-7 wt.% and the moisture content value of 9-20%.
