PROBLEM TO BE SOLVED: To provide an extraction method of extract excellent in flavor and/or extraction amount, by applying some processing to raw meat before heat extraction, and then by applying heat extraction thereto, in extraction of meat-based extract.SOLUTION: In an extraction method of extract, after applying a pressure treatment to crude raw meat at a room temperature (1°C-30°C) or lower, under a condition of 30 MPa or higher, heat extraction adding water is executed in a temperature range of lower than 120°C to the raw meat and process liquid after the pressure treatment.
