Process (1) for the preparation of the skin, comprising at least a repetition of the following steps: a first step (e1) in which it was poured into the raw milk, not been homogenized, pasteurized and not to be sterilized in a container, preferably a tank or a saucepan • a second step (e2) of the heating of the milk so that it reaches a temperature between 50 and 70°C, preferably at 60°C, and a third step (e3) of maintaining the temperature of the milk at a constant value, for a few minutes, before it is brought to boiling point • a fourth step (e4) of the boiling point of the milk • a fifth step (e5) of rest of the milk after boiling • a sixth step (e6) of the recovery of the skin of the milk thus formed at the surface of the milk.Procédé (1) dobtention de peau de lait, comprenant au moins une réitération des étapes suivantes: • une première étape (E1) dans laquelle on verse du lait cru, non homogénéisé, non pasteurisé et non stérilisé dans un récipient, de préférence une cuve ou une casserole • une seconde étape (E2) de chauffage du lait de manière à ce quil atteigne une température comprise entre 50 et 70°C, de préférence à 60°C • une troisième étape (E3) de maintient de la température du lait à une valeur constante, pendant quelques minutes, avant de le porter à ébullition • une quatrième étape (E4) débullition du lait • une cinquième étape (E5) de repos du lait, après ébullition • une sixième étape (E6) de récupération de la peau de lait ainsi formée à la surface du lait.
