An object of the present invention is to provide a processing apparatus capable of mass production by implementing automation of dried fish production. An apparatus for processing dried fish according to the present invention comprises: a cutting means having a pair of rollers arranged in a vertical direction so as to draw and guide raw materials, wherein the roller on an upper side of the pair of rollers is a cutting roller formed with a plurality of cutting blades on a surface and the roller on a lower side is a circular drawing roller, and cutting an outer skins of the raw materials using cutting edges of the cutting roller when the raw material passes between the cutting roller and the drawing roller； a washing stand in which the washing water is contained so as to wash raw materials from which the outer skins cut by the cutting means have been removed； and a drying chamber for drying the raw materials washed by the washing stand.본 발명에 의한 건어물의 가공장치는, 원재료가 인입시켜 안내하도록 한 쌍의 롤러가 수직방향으로 구성되며, 상기 한 쌍의 롤러 중 상측의 롤러는 표면으로 절단날이 다수 형성되는 절개롤러로 이루어지고, 하측의 롤러는 원형인 인입롤러로 이루어져, 상기 절개롤러와 인입롤러 사이에 원재료가 통과되면 절개롤러의 절단날로 하여금 원재료의 외피가 절개되는 절개수단； 상기 절개수단에 의해 절개된 외피를 제거한 원재료를 세척할 수 있도록 세척수가 담수되는 세척대； 상기 세척대에 의해 세척된 원재료를 건조가공하는 건조실로 이루어짐을 특징으로 한다.
